Lavender & Lemon Balm Syrup

Lavender

For the Syrup:

1 cup loosely packed Lemon Balm leaves
2 T Lavender flowers
1 Quart spring or filtered water

2 cups organic sugar or 1 1/2 cups honey or combinationCover herbs with steaming hot water & let steep overnight.
Strain herbs & measure liquid (about 3+ cups). Bring to an almost boil & immediately reduce heat to a simmer. Continue to simmer until reduced by >1/2. Do not allow your infusion to boil.Add sugar or honey & stir until dissolved.Bottle, bring to room temperature & then refrigerate. If you would like your syrup to last longer, add about 1 T/cup of vodka (lavender or lemon balm infused alcohol would be a lovely addition!).

For the Tea:
2T dried Passionflower leaves & flowers
cup of hot water
Allow to steep for at least 15 minutes
